♥ tell me what you eat, i'll tell you who you are.

for christmas, my mother gifted me with an unexpected vegan cookbook,
which i immediately wrote off due to the fact that i am not a vegan-
merely a vegetarian (read my food posts here) who loves to eat.

a few days later, when the glamour of the holiday season wore off,
and all of the holiday leftovers were finished, i opened the book to find
that it exactly what i have been waiting for: a veritable treasure trove of
delicious recipes to cook, using many of the ingredients i already have kicking
around my apartment, with very little effort and lots of flavor.

i am absolutely in love with isa chandra moskowitz's book,
appetite for reduction, and must let the whole blog world know!
tonight for dinner, i made one of my favorite dishes, which i have already
made about five times now and will happily share with you.
ps. it may look like mush, but it's damn good-
make it and see for yourself!

butternut coconut rice

ingredients:
1 cup of brown basmati rice
2 cups water
2 lbs. butternut squash
2 tsp sesame oil
1 cup sliced shallot
1 tblsp minced fresh ginger
3 cloves garlic, minced
1 tsp lime zest
1/4 tsp red pepper flakes
3/4 cup coconut milk
1/4 cup of vegetable broth
1 tblsp fresh lime juice

directions
1. preheat the oven to 400 degrees.
2. cook your rice the way your normally do.
3. slice the bulbous part of the squash off. cut in half.
4. scoop out the seeds. cut the long part in half and then in half again.
5. place squash face down on a pan and roast for 45 minutes or until soft.
6. preheat a large skillet over medium heat. add sesame oil and saute the shallot
for 7 minutes or so.
7. add the garlic, lime zest, red pepper flakes and saute for another 2 minutes.
8. once the squash has finished cooling, scoop out the flesh into skillet.
9. add the coconut milk and mash it together with a potato masher.
10. add the rice and vegetable broth and mix well.
11. add the lime juice, taste for consistency.
12. enjoy :)

  3. That looks great. We made a chickpea/coconut curry dish with scallions and white rice last night. I didn't know you were vegetarian. I am sort of vegetarian...call myself flexetarian.

  4. Funny you should post this. I'm on the hunt for a good cookbook (not necessarily vegetarian). I want to expand my cooking horizons and try some new things. I figured the best way to force myself to do that would be to get a cookbook and commit to cooking every recipe in the book that is something I would eat. Now I'm just searching for the perfect (somewhat easy) really delicious cookbook!
