♥ vegetable soup for the blogger's soul.

in the past few days, i have sneezed about five million times,
and from the experience of being a person who sneezes louder &
 more frequently than any normal human being should- i know that some 
sort of cold or flu is likely imminent. so, in an attempt to head off a head cold
 before it starts,  i made this delicious vegetable bean soup, to warm my
 cold bones and maybe distract my nose for a minute or a-choo!


ingredients:
2 tblspn extra virgin olive oil
2 medium carrots, diced small
2 celery stalks, diced small (i substituted radishes!)
1 medium yellow onion, diced small
3 garlic cloves, minced (i used 4 ;)
1 tspn dried thyme
coarse salt & ground pepper
2 cans of cannellini beans (i used dark kidney), drained & rinsed
1 can of diced tomatoes ( don't drain!)
4 cups of low sodium vegetable broth
1/4 cup of fresh chopped parsley 
(i used dry parsley & fresh chopped spinach!)

directions:
in a large pot over medium-heat, add carrots, celery & onion.
cook for about 6 minutes. then add garlic & thyme. season with salt & pepper.
cook for about 3 minutes- until fragrant.
add beans, tomato, broth & parsley and bring to a boil.
reduce heat & simmer until vegetables are tender. (about 25-30 min)
divide soup among four people, and serve with grated parmesan.

  1. Rest up Sami! Tis the season....I am fighting something off too. This looks like a delicious means to do it, and use the cannellini I have kicking in the cupboard.
