there are two different types of people in this world:
those who eat to live, and those who live to eat.
i have to admit, i am one of the latter.
to me, eating a good meal is one of life's greatest pleasures,
and there is honestly nothing i look forward to more sometimes
than my next meal! with that said, i would like to share with
you a rather delicious dish that i prepared last night
from vegetarian times.
pasta with roasted red pepper sauce.
(fyi: this recipe is actually for a twisted pasta called fusili buscati lunghi,
but i just substituted spiral pasta and it came out just as well.)
ingredients:
2 Tbs. olive oil
3 minced garlic cloves
1 cup of jarred roasted red peppers (drained, rinsed, chopped)
1 large diced carrot ( i was out of carrots so i used a tomato)
8 oz of dry fusili buscati lunghi (or 1 box of tri colored rotini pasta)
recipe:
1) heat oil in a sauce pan over medium heat. add roasted peppers, onion,
garlic and tomato. sautee 5 minutes or until onion is beginning to brown.
add 3/4 cup of water and cover it.bring down to a medium/low simmer
for 20 minutes.
2) meanwhile cook the pasta.
3) remove roasted red pepper mixture from heat and
puree in blender until smooth. season with salt & pepper.
4) drain pasta, pour red pepper sauce over it.
enjoy!!!!!!

Yum Yum, I can't wait to try this recipe. I have a similar one that uses almost the same ingredients but I also toss in capers and some white wine... and then an obscene amount of parmesan cheese as a topper!
