last night i joined nick's parents and their very good friends
for dinner. since i knew they were cooking on the grille, i decided to
try out a coconut cake recipe i had printed out ages ago.
this lovely cake is dense and yet airy, light and yet flavorful- and can be topped
with anything from espresso sauce, to whipped cream to mangos & nectarines,
but i tried a berry combination and found that the juiciness of the fruit
really made it sing. (if cakes sing, that is.)

ingredients:
2 cups of all purpose flour
1 tsp baking powder
2 sticks of unsalted butter, softened
1 1/3 cups of sugar
1 tsp vanilla
3 large eggs
1 cup of milk
1 1/2 cups of shredded coconut
directions:
line a fair size cake pan with wax paper.
beat butter with electric mixer until creamy.
gradually beat in sugar on medium until light and fluffy.
add vanilla, then beat eggs in one at a time.
alternately beat in flour + milk+ baking powder.
increase the speed and beat for a few mintes.
fold in the coconut.
spoon the batter into cake pan and spread evenly.
bake cake in the middle of oven until golden brown (about 1 hour, 15 min)
take out and let cool.
flip pan over, remove cake and add toppings.
take a bite-- do you hear music?
