it always amazes me when a simple combination of fruits &
vegetables combine to make the most flavorful of meals.
exhibit a: this delicious guacamole recipe.
ingredients:
2 ripe avocados
1 red onion, finely chopped
1 clove of garlic, minced
1 ripe tomato, chopped
1 lime, juiced
salt & pepper to taste
instructions:
1) peel and mash avocados in a medium serving bowl.
2) stir in onion, garlic, tomato, lime juice, salt & pepper.
3) season with remaining lime juice.
4) chill for a 1/2 hour to blend flavors.
5) break out a bag of tortilla chips & enjoy!

ReplyDeleteOh, I love guacamole! However, guacamole sometimes leads me to the margarita which leads to lots of salty chips which inevitably leads to guilt BUT in the end leads me right back to the avocado because it's healthy :)
