wow, i must be on a disney kick of some sort because
here i am making yet another connection!
tonight, on this cold, impossibly drizzly evening, i decided to make
something warm and satisfying for nick and i to eat for dinner.
i chose one of my favorite vegetarian recipes:
zucchini & chickpea ratatouille
and according to nick, the only thing missing is meat!
ingredients:
2 medium sized zucchini, quartered lengthwise and cut into 1/2 inch pieces
1 large pepper, cored, seeded and cut into 1/2 inch pieces
2 tablespoons of olive oil
4 cloves of garlic, finely chopped
2 cans of italian seasoned diced tomatoes
1 can of chickpeas, drained and rinsed
1/4 teaspoon of salt
1/8 teaspoon of black pepper
1/8 teaspoon of red pepper flakes
3 cups of cooked brown rice
1) heat oven to 425 degrees.
2) coat a baking sheet with nonsticking cooking spray.
add zucchini and pepper, toss with 1 tablespoon of olive oil.
bake at 425 degrees for 30 minutes or until tender.
3) heat remaining 1 tablespoon of oik in a large nonstick skillet
over medium high heat. add garlic, cook 30 seconds to 1 minute.
stir in tomatoes and cook for 5 minutes, stirring occasionally.
add zucchini, peppers, chickpeas, salt, pepper and red pepper flakes.
cook an additional 5 minutes, stirring occasionally.
serve with cooked brown rice.
4) enjoy!!
