when i was a little girl, one of my favorite stories was
suppertime for frieda fuzzypaws. {read the story here}
basically, she was a bratty but adorable little kitty who wanted to
skip over her healthy dinner and move right onto dessert!
as you can see, by the end of the story, frieda gets her "just desserts,"
and you can too, with this fabulous recipe from my favorite baking book,
{yes, they really do taste as good as they look!}
chocolate chip whoppers
ingredients:
2 cups unbleached all purpose flour
1 tsp baking soda
3/4 tsp salt
1 cup (2 sticks) of butter (melted and slightly cooled)
3/4 cup of granulated sugar
3/4 cup packed light brown sugar
1 tsp vanilla extract
3 tblsp of water
2 cups of chocolate chips
1 cup of coarsley chopped walnuts or pecans (optional)
instructions:
preheat the oven to 350 degrees,
line two baking sheets with foil
sift the flour, baking soda and salt into a medium bowl and set aside.
in a large bowl, using the electric mixer on low speed, mix the melted butter,
granulated sugar, brown sugar, and vanilla until smooth about 30 seconds.
stop the mixer and scrape the sides of the bowl.
add the flour mixture, mixing just until incorporated.
the dough will look crumbly. mix in the water.
the dough will become soft and smooth.
stir in the chocolate chips and nuts, if desired.
(i used walnuts, yum!)
using an ice cream scoop, scoop the dough onto prepared baking sheets.
gently press the cookies to flatten them slightly.
bake the cookies one sheet at a time until the tops are lightly browned
and have cracks, 15- 17 minutes. cool cookies for 5 minutes on baking sheets,
then transfer to wire rack to cool more thoroughly.
pour yourself a glass of milk and enjoy a victorious
frieda fuzzypaws cookie moment.
